We're taking fresh pineapple rings and giving them a warm, caramelized char on the grill. But it doesn't stop there - oh no. We're also whipping up an insanely delicious coconut caramel sauce to drizzle all over this tropical treat. It's sweet, it's saucy, it's an exotic dessert masterpiece.

For the Grilled Pineapple:
- 1 fresh pineapple, peeled, cored and sliced into 1/2-inch thick rings
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
- 1 tbsp melted butter or oil
For the Coconut Caramel Sauce:
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/2 cup coconut milk
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions:
- Fire up your grill to medium-high heat. In a small bowl, mix together the brown sugar and cinnamon.
- Brush the pineapple rings lightly with melted butter or oil on both sides. Sprinkle the cinnamon-sugar mixture evenly over the rings.
- Grill the pineapple for 2-3 minutes per side until caramelized grill marks appear. Try not to move them too much once on the grill.
- While the pineapple is grilling, make the coconut caramel sauce. Combine the brown sugar, butter, coconut milk, vanilla and salt in a saucepan.
- Bring the sauce to a gentle boil over medium heat, stirring frequently. Allow it to bubble for 5 minutes until thickened to a syrup-like consistency.
- Remove the grilled pineapple rings from the heat and transfer to a plate. Generously drizzle the coconut caramel sauce over the top.
- Serve these sticky, saucy pineapple rings while still warm. The heat will help that caramel sauce stay nice and drippy!
