  • 10 ounces fresh strawberries, trimmed, rinsed, and quartered
  • 3 tablespoons sugar
  • ΒΎ cup heavy cream
  • ΒΌ cup confectioners' sugar
  • 2 tablespoons strawberry preserves
  • Β½ teaspoon almond extract
  • Fresh mint and extra chopped strawberries for garnish (optional)
Instructions:
  1. Add the strawberries and sugar to a blender, and process until you have a fine puree. Set aside.
  2. In a chilled bowl, beat the heavy cream with chilled beaters until frothy. Add the confectioners' sugar, strawberry preserves, and almond extract. Continue to beat until stiff peaks form, about 1 to 2 minutes.
  3. Divide the strawberry puree equally among the shooter glasses, filling them about a quarter to a third of the way up.
  4. Spoon or pipe the mousse on top of the puree.
  5. Garnish with fresh mint and chopped strawberries, if desired.
  6. Chill in the fridge until ready to serve.
