Ingredients:
- 10 ounces fresh strawberries, trimmed, rinsed, and quartered
- 3 tablespoons sugar
- ΒΎ cup heavy cream
- ΒΌ cup confectioners' sugar
- 2 tablespoons strawberry preserves
- Β½ teaspoon almond extract
- Fresh mint and extra chopped strawberries for garnish (optional)
Instructions:
- Add the strawberries and sugar to a blender, and process until you have a fine puree. Set aside.
- In a chilled bowl, beat the heavy cream with chilled beaters until frothy. Add the confectioners' sugar, strawberry preserves, and almond extract. Continue to beat until stiff peaks form, about 1 to 2 minutes.
- Divide the strawberry puree equally among the shooter glasses, filling them about a quarter to a third of the way up.
- Spoon or pipe the mousse on top of the puree.
- Garnish with fresh mint and chopped strawberries, if desired.
- Chill in the fridge until ready to serve.
