Stuffed Bangus, or stuffed milkfish, is a delicious Filipino dish. Here's a recipe for Stuffed Bangus:

Ingredients:

  • 1 whole bangus (milkfish), scaled, gutted, and cleaned
  • 2 tomatoes, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, julienned
  • 1/2 cup carrots, julienned
  • 1/2 cup green bell pepper, diced
  • 1/2 cup raisins
  • 1/2 cup green peas (fresh or frozen)
  • 1/2 cup grated cheese
  • 1/4 cup soy sauce
  • 2 tablespoons calamansi or lemon juice
  • Salt and pepper to taste
  • Cooking oil for frying
Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat some cooking oil over medium heat. Sauté garlic, onion, and ginger until fragrant.
  3. Add tomatoes and cook until softened.
  4. Mix in carrots, green bell pepper, raisins, and green peas. Cook for a few minutes until vegetables are slightly tender.
  5. Season the mixture with soy sauce, calamansi or lemon juice, salt, and pepper. Stir well and cook for another minute.
  6. Remove the skillet from heat and let the mixture cool down.
  7. Stuff the bangus with the vegetable mixture and grated cheese. Use toothpicks or kitchen twine to secure the fish closed.
  8. Heat some cooking oil in a large skillet over medium-high heat. Carefully place the stuffed bangus in the skillet and cook until golden brown on both sides.
  9. Once browned, transfer the stuffed bangus to a baking dish and bake in the preheated oven for about 20-25 minutes or until the fish is fully cooked.
  10. Once cooked, carefully remove the toothpicks or kitchen twine. Serve the stuffed bangus hot with steamed rice and enjoy your delicious meal!
