Shoutout to all my veggie lovers out there! 🌿 Just had to share this Summer Squash and Chive Pancakes recipe 🥞🥒🧅. It's perfect for a healthy and tasty meal! 🌟🌿

Ingredients​

  • 2cups squash,cooked, shredded from 3½ yellow squash
  • 1egg
  • 1egg white
  • ⅔cupflour
  • ½tspbaking powder
  • 1garlic clove, crushed
  • ⅓cupParmesan cheese
  • 3tbspchives, fresh, chopped
  • ½tspkosher salt
  • pinch fresh cracked pepper
  • olive oil spray

Procedures​

  1. Place the squash in a medium pot and cover it with water.
  2. Bring the water to a boil, cover the pot, and cook until the squash is soft.
  3. Once the squash is soft, drain the water, transfer the squash to a food processor, and pulse a few times until it is chopped.
  4. Measure out 2 cups of the chopped squash and place it in a medium bowl.
  5. Mix the chopped squash with the remaining ingredients, except for the oil, until well combined.
  6. Heat a large skillet on medium heat. When hot, spray lightly with oil and reduce the heat to medium-low.
  7. Drop ¼ cupfuls of the batter into the skillet, flattening them slightly with the back of a spoon, and cook for a few minutes until golden brown.
  8. Flip the batter and cook the other side until golden brown.
  9. Set the cooked pieces aside and repeat the process with the remaining batter.
