Hey everyone! I wanted to share my go-to tofu scramble recipe—it's seriously so good, even my non-vegan friends ask for it. Perfect for breakfast or brunch, and super customizable!

- 1 block of firm tofu (about 14 oz), drained and crumbled
- 1 tbsp olive oil or vegan butter
- 1/2 onion, diced
- 1 bell pepper, diced (I love using red or yellow for color)
- 1/2 tsp turmeric (for color and flavor)
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 1-2 tbsp nutritional yeast (optional, but adds a nice "cheesy" flavor)
- A handful of spinach or kale (optional, but great for extra greens)
- Chopped green onions or fresh herbs (like parsley) for garnish
- Prep the tofu: Start by draining the tofu and crumbling it up with your hands or a fork. Aim for a texture similar to scrambled eggs.
- Cook the veggies: Heat the olive oil in a skillet over medium heat. Add the onion and bell pepper, and sauté until softened (about 5 minutes).
- Add the tofu & seasonings: Add the crumbled tofu to the skillet along with turmeric, garlic powder, salt, and pepper. Stir well, so the tofu gets that nice yellow color from the turmeric.
- Flavor it up: Stir in the nutritional yeast if you're using it. It gives a nice, savory taste. Let everything cook together for another 5-7 minutes, stirring occasionally.
- Add greens (if using): Throw in the spinach or kale in the last minute or so—just long enough to wilt slightly.
- Serve & enjoy! Garnish with green onions or fresh herbs, if you like, and serve hot. I love having mine with avocado on the side or toast.
