Super Tasty Tofu Scramble Recipe 🌱🍳

Hey everyone! I wanted to share my go-to tofu scramble recipe—it's seriously so good, even my non-vegan friends ask for it. Perfect for breakfast or brunch, and super customizable!
Ingredients:
  • 1 block of firm tofu (about 14 oz), drained and crumbled
  • 1 tbsp olive oil or vegan butter
  • 1/2 onion, diced
  • 1 bell pepper, diced (I love using red or yellow for color)
  • 1/2 tsp turmeric (for color and flavor)
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1-2 tbsp nutritional yeast (optional, but adds a nice "cheesy" flavor)
  • A handful of spinach or kale (optional, but great for extra greens)
  • Chopped green onions or fresh herbs (like parsley) for garnish
Instructions:
  1. Prep the tofu: Start by draining the tofu and crumbling it up with your hands or a fork. Aim for a texture similar to scrambled eggs.
  2. Cook the veggies: Heat the olive oil in a skillet over medium heat. Add the onion and bell pepper, and sauté until softened (about 5 minutes).
  3. Add the tofu & seasonings: Add the crumbled tofu to the skillet along with turmeric, garlic powder, salt, and pepper. Stir well, so the tofu gets that nice yellow color from the turmeric.
  4. Flavor it up: Stir in the nutritional yeast if you're using it. It gives a nice, savory taste. Let everything cook together for another 5-7 minutes, stirring occasionally.
  5. Add greens (if using): Throw in the spinach or kale in the last minute or so—just long enough to wilt slightly.
  6. Serve & enjoy! Garnish with green onions or fresh herbs, if you like, and serve hot. I love having mine with avocado on the side or toast. 🌱🍞
