Ingredients:

  • 500g firm white fish fillets (such as tilapia or cod), cut into bite-sized pieces
  • 1 bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 1 carrot, sliced
  • 1 cup pineapple chunks (fresh or canned)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons ketchup
  • 2 tablespoons white vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons water
  • Salt and pepper to taste
  • Cooking oil for frying
  • Spring onions for garnish (optional)
  • Steamed rice for serving
Instructions:

  1. Season the fish pieces with salt and pepper.
  2. Heat cooking oil in a frying pan over medium-high heat. Fry the fish until golden brown and cooked through. Remove from the pan and set aside.
  3. In the same pan, add a little more oil if needed. Sauté the garlic and ginger until fragrant.
  4. Add the bell pepper, onion, and carrot to the pan. Stir-fry until they start to soften.
  5. In a bowl, mix together the ketchup, white vinegar, brown sugar, and soy sauce to make the sauce.
  6. Pour the sauce into the pan with the vegetables. Stir well to combine.
  7. Add the pineapple chunks to the pan and stir.
  8. Once the sauce starts to simmer, add the dissolved cornstarch to thicken the sauce. Stir continuously until the sauce thickens.
  9. Return the fried fish to the pan and gently toss to coat it with the sauce.
  10. Cook for another minute or until everything is heated through.
  11. Taste and adjust the seasoning if needed.
  12. Transfer to a serving dish, garnish with spring onions if desired, and serve hot with steamed rice.Enjoy your homemade Sweet and Sour Fish!
