- 500g firm white fish fillets (such as tilapia or cod), cut into bite-sized pieces
- 1 bell pepper, cut into chunks
- 1 onion, cut into chunks
- 1 carrot, sliced
- 1 cup pineapple chunks (fresh or canned)
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons ketchup
- 2 tablespoons white vinegar
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch, dissolved in 2 tablespoons water
- Salt and pepper to taste
- Cooking oil for frying
- Spring onions for garnish (optional)
- Steamed rice for serving
- Season the fish pieces with salt and pepper.
- Heat cooking oil in a frying pan over medium-high heat. Fry the fish until golden brown and cooked through. Remove from the pan and set aside.
- In the same pan, add a little more oil if needed. Sauté the garlic and ginger until fragrant.
- Add the bell pepper, onion, and carrot to the pan. Stir-fry until they start to soften.
- In a bowl, mix together the ketchup, white vinegar, brown sugar, and soy sauce to make the sauce.
- Pour the sauce into the pan with the vegetables. Stir well to combine.
- Add the pineapple chunks to the pan and stir.
- Once the sauce starts to simmer, add the dissolved cornstarch to thicken the sauce. Stir continuously until the sauce thickens.
- Return the fried fish to the pan and gently toss to coat it with the sauce.
- Cook for another minute or until everything is heated through.
- Taste and adjust the seasoning if needed.
- Transfer to a serving dish, garnish with spring onions if desired, and serve hot with steamed rice.Enjoy your homemade Sweet and Sour Fish!
