Ingredients:
For the Fish:
  • 1 lb (450g) firm white fish fillets (such as tilapia or cod), cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • Vegetable oil, for frying
For the Sweet and Sour Sauce:
  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 1 cup pineapple chunks (fresh or canned)
  • Optional garnish: chopped green onions or cilantro
Instructions:
  1. Season the fish pieces with salt and pepper. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one empty plate.
  2. Heat vegetable oil in a large skillet or deep fryer to 350°F (180°C).
  3. Dredge each piece of fish in the flour, then dip into the beaten eggs, and finally coat again with flour. Shake off any excess flour.
  4. Carefully place the breaded fish pieces into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side. Transfer the fried fish to a paper towel-lined plate to drain excess oil.
  5. In a separate saucepan, combine the ketchup, rice vinegar, brown sugar, and soy sauce. In a small bowl, mix the cornstarch with water until smooth, then add it to the saucepan. Stir well to combine.
  6. Bring the sauce to a simmer over medium heat, stirring constantly until it thickens, about 2-3 minutes.
  7. Add the diced bell peppers, onion, and pineapple chunks to the saucepan. Stir to coat the vegetables and pineapple with the sauce.
  8. Continue to cook for another 2-3 minutes until the vegetables are slightly softened but still crisp.
  9. Once the sauce and vegetables are ready, pour the sweet and sour sauce over the fried fish pieces.
  10. Garnish with chopped green onions or cilantro if desired, and serve hot with steamed rice.
