- 1 lb (450g) firm white fish fillets (such as tilapia or cod), cut into bite-sized pieces
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Vegetable oil, for frying
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1/4 cup water
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 1 cup pineapple chunks (fresh or canned)
- Optional garnish: chopped green onions or cilantro
- Season the fish pieces with salt and pepper. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one empty plate.
- Heat vegetable oil in a large skillet or deep fryer to 350°F (180°C).
- Dredge each piece of fish in the flour, then dip into the beaten eggs, and finally coat again with flour. Shake off any excess flour.
- Carefully place the breaded fish pieces into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side. Transfer the fried fish to a paper towel-lined plate to drain excess oil.
- In a separate saucepan, combine the ketchup, rice vinegar, brown sugar, and soy sauce. In a small bowl, mix the cornstarch with water until smooth, then add it to the saucepan. Stir well to combine.
- Bring the sauce to a simmer over medium heat, stirring constantly until it thickens, about 2-3 minutes.
- Add the diced bell peppers, onion, and pineapple chunks to the saucepan. Stir to coat the vegetables and pineapple with the sauce.
- Continue to cook for another 2-3 minutes until the vegetables are slightly softened but still crisp.
- Once the sauce and vegetables are ready, pour the sweet and sour sauce over the fried fish pieces.
- Garnish with chopped green onions or cilantro if desired, and serve hot with steamed rice.
