Ingredients:
- 2 cups peeled and cubed winter squash (butternut, acorn, or pumpkin)
- 1 cup granulated sugar
- 1/2 cup water
- 1/4 cup honey or maple syrup
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- Pinch of salt
- Optional: 1/2 cup chopped nuts (like walnuts or pecans) for added texture
Instructions:
- Prepare the Squash:
- Peel and cube the squash into bite-sized pieces. You can steam or boil the squash until tender, about 10-15 minutes. Drain and let it cool slightly.
- Cook the Squash:
- In a large saucepan, combine the sugar, water, honey (or maple syrup), cinnamon, nutmeg, ginger, and salt. Bring to a boil over medium heat, stirring occasionally.
- Add the Squash:
- Once the syrup is boiling, add the cooked squash cubes. Reduce the heat to low and simmer gently. Cook the squash in the syrup for about 20-30 minutes, stirring occasionally, until the squash is tender and the syrup has thickened to a candy-like consistency.
- Optional: Add Nuts:
- If you’re using nuts, stir them in during the last 5 minutes of cooking.
- Cool and Set:
- Remove the saucepan from heat and let the squash candy cool in the syrup. The syrup will continue to thicken as it cools.
- Once cooled, transfer the squash candy to a parchment-lined baking sheet or dish to set. You can cut it into squares or shapes once it’s completely cooled and slightly firm.
- Store:
- Store the sweetened squash candy in an airtight container. It will keep at room temperature for about a week or can be refrigerated for longer storage.
Tips:
- Consistency: If the syrup is too thin when you’re done cooking, you can boil it down a bit more to reach the desired consistency. Be careful not to overcook, as the syrup can burn easily.
- Flavor Variations: Feel free to experiment with other spices like clove or allspice for different flavor profiles.
- Serving: This candy is great on its own or can be added to desserts like ice cream or yogurt for a sweet treat.
