- 1 1/2 pounds beef round steak
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons vegetable oil
- 1 medium onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 (14.5-ounce) can diced tomatoes
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 bay leaf
Instructions
- Prepare the Steak
- Season the beef round steak with salt and pepper on both sides.
- Dredge the steak in flour, shaking off any excess.
- Brown the Steak
- In a large skillet, heat the vegetable oil over medium-high heat.
- Add the steak and brown on both sides, about 3-4 minutes per side. Remove the steak from the skillet and set aside.
- Sauté Vegetables
- In the same skillet, add the sliced onion and green bell pepper. Sauté until the vegetables are tender, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes, until fragrant.
- Add Liquids and Seasonings
- Stir in the diced tomatoes (with their juice), beef broth, Worcestershire sauce, paprika, thyme, and bay leaf.
- Bring the mixture to a boil.
- Simmer the Steak
- Return the browned steak to the skillet, nestling it into the sauce.
- Reduce the heat to low, cover, and simmer for 1 1/2 to 2 hours, or until the steak is tender and the sauce has thickened. Stir occasionally to prevent sticking.
- Serve
- Remove the bay leaf before serving.
- Serve the Swiss steak over mashed potatoes, rice, or egg noodles, with plenty of the rich sauce.
