  • 1 1/2 pounds beef round steak
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) can diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions​

  1. Prepare the Steak
    • Season the beef round steak with salt and pepper on both sides.
    • Dredge the steak in flour, shaking off any excess.
  2. Brown the Steak
    • In a large skillet, heat the vegetable oil over medium-high heat.
    • Add the steak and brown on both sides, about 3-4 minutes per side. Remove the steak from the skillet and set aside.
  3. Sauté Vegetables
    • In the same skillet, add the sliced onion and green bell pepper. Sauté until the vegetables are tender, about 5 minutes.
    • Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  4. Add Liquids and Seasonings
    • Stir in the diced tomatoes (with their juice), beef broth, Worcestershire sauce, paprika, thyme, and bay leaf.
    • Bring the mixture to a boil.
  5. Simmer the Steak
    • Return the browned steak to the skillet, nestling it into the sauce.
    • Reduce the heat to low, cover, and simmer for 1 1/2 to 2 hours, or until the steak is tender and the sauce has thickened. Stir occasionally to prevent sticking.
  6. Serve
    • Remove the bay leaf before serving.
    • Serve the Swiss steak over mashed potatoes, rice, or egg noodles, with plenty of the rich sauce.
