Bursting with savory flavors and hearty ingredients, this dish is a comforting crowd-pleaser that's perfect for any occasion. Get ready to delight your taste buds with this easy-to-make taco casserole! 🌮🥘

Ingredients:
  • 1 pound ground beef (or turkey)
  • 1 small onion, diced
  • 1 packet (1.25 oz) taco seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 cup salsa
  • 2 cups shredded Mexican blend cheese
  • 1 bag (9 oz) tortilla chips, crushed
  • Optional toppings: sliced jalapeños, diced tomatoes, sour cream, avocado, chopped cilantro
Instructions:
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray.
  2. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is soft. Drain any excess grease.
  3. Add the taco seasoning mix to the skillet with the beef and onion, along with a splash of water if needed, according to the seasoning packet instructions. Stir to combine and let it simmer for a few minutes.
  4. In a large mixing bowl, combine the cooked beef mixture, black beans, corn, diced tomatoes with green chilies, and salsa. Mix well.
  5. Spread half of the crushed tortilla chips in an even layer on the bottom of the prepared baking dish.
  6. Spoon half of the beef and vegetable mixture over the tortilla chips, spreading it out evenly.
  7. Sprinkle half of the shredded cheese over the beef mixture.
  8. Repeat the layers with the remaining crushed tortilla chips, beef mixture, and shredded cheese.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  10. Remove the foil and bake for an additional 5 minutes to allow the cheese to brown slightly.
  11. Once done, remove from the oven and let it cool for a few minutes before serving.
  12. Serve the taco casserole hot, topped with your favorite toppings such as sliced jalapeños, diced tomatoes, sour cream, avocado, and chopped cilantro.
