- 1 small onion, diced
- 1 packet (1.25 oz) taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 cup salsa
- 2 cups shredded Mexican blend cheese
- 1 bag (9 oz) tortilla chips, crushed
- Optional toppings: sliced jalapeños, diced tomatoes, sour cream, avocado, chopped cilantro
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray.
- In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is soft. Drain any excess grease.
- Add the taco seasoning mix to the skillet with the beef and onion, along with a splash of water if needed, according to the seasoning packet instructions. Stir to combine and let it simmer for a few minutes.
- In a large mixing bowl, combine the cooked beef mixture, black beans, corn, diced tomatoes with green chilies, and salsa. Mix well.
- Spread half of the crushed tortilla chips in an even layer on the bottom of the prepared baking dish.
- Spoon half of the beef and vegetable mixture over the tortilla chips, spreading it out evenly.
- Sprinkle half of the shredded cheese over the beef mixture.
- Repeat the layers with the remaining crushed tortilla chips, beef mixture, and shredded cheese.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
- Remove the foil and bake for an additional 5 minutes to allow the cheese to brown slightly.
- Once done, remove from the oven and let it cool for a few minutes before serving.
- Serve the taco casserole hot, topped with your favorite toppings such as sliced jalapeños, diced tomatoes, sour cream, avocado, and chopped cilantro.
