Ingredients:
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 8 oz pasta (such as penne or rotini)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Optional toppings: chopped green onions, diced tomatoes, shredded lettuce, sliced olives
Instructions:
  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, cook ground beef or turkey over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and diced tomatoes (with their juices) to the skillet. Stir well.
  4. Simmer for about 5 minutes, allowing the flavors to meld together.
  5. Reduce heat to low. Stir in cooked pasta, shredded cheese, and sour cream until well combined and heated through.
  6. Serve hot, topped with optional toppings as desired.
