Craving a comforting meal? Try our easy-to-make tamale pie recipe that's hearty and full of flavor!

Ingredients:

  • 1 lb ground beef (or turkey)
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (15 oz) corn kernels, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) enchilada sauce
  • 1 cup cornmeal
  • 1 cup shredded cheddar cheese
  • 1 tbsp chili powder
  • Salt and pepper to taste
Procedure:

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a skillet, cook ground beef, onion, and bell pepper until meat is browned and vegetables are tender. Drain excess fat.
  3. Stir in corn, black beans, enchilada sauce, chili powder, salt, and pepper. Simmer for 5 minutes.
  4. Meanwhile, prepare cornmeal according to package instructions.
  5. Spread half of the cornmeal mixture into the bottom of the baking dish.
  6. Spoon meat mixture over cornmeal layer. Sprinkle with half of the cheese.
  7. Spread remaining cornmeal mixture over meat mixture. Top with remaining cheese.
  8. Bake for 30-35 minutes until cheese is melted and bubbly.
  9. Serve hot, garnished with fresh cilantro if desired.
