Ingredients:
- 1 lb ground beef (or turkey)
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can (15 oz) corn kernels, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) enchilada sauce
- 1 cup cornmeal
- 1 cup shredded cheddar cheese
- 1 tbsp chili powder
- Salt and pepper to taste
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a skillet, cook ground beef, onion, and bell pepper until meat is browned and vegetables are tender. Drain excess fat.
- Stir in corn, black beans, enchilada sauce, chili powder, salt, and pepper. Simmer for 5 minutes.
- Meanwhile, prepare cornmeal according to package instructions.
- Spread half of the cornmeal mixture into the bottom of the baking dish.
- Spoon meat mixture over cornmeal layer. Sprinkle with half of the cheese.
- Spread remaining cornmeal mixture over meat mixture. Top with remaining cheese.
- Bake for 30-35 minutes until cheese is melted and bubbly.
- Serve hot, garnished with fresh cilantro if desired.
