Made this shepherd’s pie last night and it was a huge hit! Hearty, comforting, and the perfect way to use up ground meat and veggies.

Ingredients:
- 1 lb ground lamb or beef
- 1 onion, diced
- 2 carrots, diced
- 1/2 cup peas
- 2 garlic cloves, minced
- 1 tbsp tomato paste
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- 4 cups mashed potatoes (prepared)
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
- Cook the Filling: In a large skillet, brown the ground meat. Add onions, carrots, garlic, and cook until softened. Stir in tomato paste, beef broth, Worcestershire sauce, and peas. Simmer until thickened, about 5-7 minutes. Season with salt and pepper.
- Assemble the Pie: Preheat oven to 400°F (200°C). Spread the meat mixture evenly in a baking dish. Top with mashed potatoes and spread them out evenly. Add cheese on top if using.
- Bake: Bake for 20-25 minutes until the potatoes are golden and crispy on top.
- Serve: Let it cool slightly, then dig in!
