Tequeños Recipe:

Ingredients:

  • 1 pound (450g) queso blanco or mozzarella cheese, cut into sticks
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cut into small pieces
  • 1 egg
  • 1/2 cup water
  • Vegetable oil for frying
Instructions:

  1. In a large bowl, mix the flour, baking powder, and salt.
  2. Add the cold butter pieces and mix until the mixture resembles coarse crumbs.
  3. Add the egg and water, mixing until a dough forms. Knead the dough on a lightly floured surface until smooth, about 5 minutes.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. On a floured surface, roll out the dough to about 1/8-inch thickness. Cut into strips about 1 inch wide and 4-5 inches long.
  6. Wrap each cheese stick with a strip of dough, sealing the ends tightly.
  7. Heat the vegetable oil in a deep pot or fryer to 350°F (175°C).
  8. Fry the tequeños in batches until golden brown, about 3-4 minutes per batch. Drain on paper towels.
  9. Serve warm with your favorite dipping sauce, such as guacamole or garlic sauce.
