Tequeños Recipe:
Ingredients:
- 1 pound (450g) queso blanco or mozzarella cheese, cut into sticks
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, cold and cut into small pieces
- 1 egg
- 1/2 cup water
- Vegetable oil for frying
- In a large bowl, mix the flour, baking powder, and salt.
- Add the cold butter pieces and mix until the mixture resembles coarse crumbs.
- Add the egg and water, mixing until a dough forms. Knead the dough on a lightly floured surface until smooth, about 5 minutes.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- On a floured surface, roll out the dough to about 1/8-inch thickness. Cut into strips about 1 inch wide and 4-5 inches long.
- Wrap each cheese stick with a strip of dough, sealing the ends tightly.
- Heat the vegetable oil in a deep pot or fryer to 350°F (175°C).
- Fry the tequeños in batches until golden brown, about 3-4 minutes per batch. Drain on paper towels.
- Serve warm with your favorite dipping sauce, such as guacamole or garlic sauce.
