Tilapia with Zesty Mango Salsa & a Splash of Rose

Hey there, I'm really excited to share a recipe with you guys that I recently tried out and absolutely loved, I hope you'll enjoy making it as much as I did and that it brings a burst of flavor to your dinner table too!

Ingredients:
  • 3 tilapia fillets, about 4 ozs each
  • ½ tbsp extra virgin olive oil
  • Pinch of salt
For the mango salsa:

  • 1 ½ cups chopped mangoes (2 mangoes)
  • 1 large garlic clove, minced
  • 1 tsp finely chopped jalapeño pepper
  • 2 tbsp cilantro, chopped
  • 1 tbsp fresh squeezed lime juice
Instructions:

  1. First things first, let's prep that mango salsa! Now, slicing mangoes can sometimes feel like a real workout, am I right? But trust me, it's worth it! Once you've conquered those mangoes, combine them with minced garlic, jalapeño pepper, cilantro, and a squeeze of lime juice. Mix it all up and set it aside to let those flavors mingle.
  2. Now, onto our star of the show – the tilapia fillets! Pat them dry with a paper towel; we want those babies nice and dry to ensure a beautiful sear. Sprinkle a pinch of salt on both sides of each fillet.
  3. Heat up a skillet over medium-high heat and add that extra virgin olive oil. Once the oil is shimmering, gently place your tilapia fillets in the skillet. Now, here's the tricky part – don't overcrowd the pan! Give each fillet some space to sizzle up nicely.
