Hello everyone! When I visited Thailand last month, one dish that I couldn't seem to get out of my mind was this popular Thai coconut soup with chicken and fragrant herbs. So I tried researching how to re-make that dish and now, I gladly share my recipe here.
Feel free to adjust the spice level by adding more or fewer red chili peppers according to your taste preferences. You can also add other ingredients like shrimp or tofu for variation.
Easy Tom Kha Gai Recipe
Ingredients:
- 500g boneless, skinless chicken thighs or breast, thinly sliced
- 4 cups chicken broth
- 2 cups coconut milk
- 2 stalks lemongrass, bruised and chopped into segments
- 4-5 slices galangal (or ginger)
- 4-5 kaffir lime leaves, torn into pieces
- 2-3 red chili peppers, sliced (adjust to taste)
- 200g mushrooms (such as straw mushrooms or button mushrooms), sliced
- 1 medium-sized onion, sliced
- 2-3 tablespoons fish sauce
- 2-3 tablespoons lime juice
- 1 tablespoon palm sugar or brown sugar
- Fresh cilantro leaves for garnish
- Optional: Thai bird's eye chili for extra heat
- Optional: Thai basil leaves for garnish
Instructions:
- Prepare the Ingredients:
- Slice the chicken into thin strips.
- Bruise the lemongrass stalks with the back of a knife and chop them into segments.
- Tear the kaffir lime leaves into pieces.
- Slice the mushrooms, onion, and red chili peppers.
- Cook the Soup:
- In a large pot, bring the chicken broth to a simmer over medium heat.
- Add the lemongrass, galangal (or ginger), and torn kaffir lime leaves to the pot. Let them simmer for about 5 minutes to infuse the broth with flavor.
- Stir in the coconut milk and bring the mixture back to a simmer.
- Add the sliced chicken, mushrooms, onion, and sliced red chili peppers to the pot. Let the soup simmer gently for about 8-10 minutes, or until the chicken is cooked through and the vegetables are tender.
- Season the Soup:
- Stir in the fish sauce, lime juice, and palm sugar (or brown sugar) to the soup.
- Taste the soup and adjust the seasoning according to your preference. Add more fish sauce for saltiness, lime juice for acidity, or sugar to balance the flavors.
- Serve:
- Ladle the Tom Kha Gai soup into serving bowls.
- Garnish each bowl with fresh cilantro leaves and Thai basil leaves, if desired.
- Serve hot as a comforting and aromatic soup.
