- 1 baguette or crusty Italian bread, sliced into 1/2-inch thick slices
- 2-3 ripe tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 2-3 cloves garlic, minced
- 1/4 cup extra-virgin olive oil, plus extra for brushing the bread
- 1 tablespoon balsamic vinegar (optional)
- Salt and freshly ground black pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions:
- Prepare the Bread:
- Preheat your oven to 400°F (200°C) or preheat a grill.
- Arrange the bread slices on a baking sheet. Brush each slice lightly with olive oil.
- Toast the bread in the oven for about 5-7 minutes, or grill for about 2-3 minutes on each side, until golden and crispy.
- Prepare the Topping:
- In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, and 1/4 cup of olive oil.
- Add balsamic vinegar if using, and season with salt and freshly ground black pepper to taste. Mix well.
- Assemble the Bruschetta:
- Once the bread slices are toasted, remove them from the oven or grill and let them cool slightly.
- Spoon the tomato mixture onto each slice of bread.
