What's up, everyone? Got something cool to share! I recently discovered a fantastic recipe for creamy tomato basil soup that's perfect for cozy nights in or a quick lunch fix. I couldn't resist sharing it with all of you!
Ingredients:

Ingredients:
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can (28 ounces) of crushed tomatoes
- 2 cups of chicken or vegetable broth
- 1/2 cup of heavy cream
- 1/4 cup of fresh basil leaves, chopped
- Salt and pepper to taste
- Optional: grated Parmesan cheese and croutons for garnish
- Heat olive oil in a large pot over medium heat. Add diced onions and cook until softened about 5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Pour in the crushed tomatoes and chicken or vegetable broth. Bring the mixture to a simmer and let it cook for 10-15 minutes, stirring occasionally.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer the mixture to a blender and blend until smooth, then return it to the pot.
- Stir in the heavy cream and chopped basil leaves. Season with salt and pepper to taste.
- Let the soup simmer for an additional 5 minutes to allow the flavors to meld together.
- Serve hot, garnished with grated Parmesan cheese and croutons if desired.
