- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (28 ounces each) whole peeled tomatoes
- 1 cup vegetable broth or chicken broth
- 1/4 cup fresh basil leaves, chopped (plus extra for garnish)
- 1/2 cup heavy cream or half-and-half
- Salt and pepper, to taste
- Optional toppings: grated Parmesan cheese, croutons, additional fresh basil leaves
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion to the pot and sauté for 3-4 minutes, or until softened and translucent.
- Add the minced garlic to the pot and cook for an additional 1-2 minutes, or until fragrant.
- Pour the canned tomatoes and their juices into the pot, breaking up the tomatoes with a spoon or spatula.
- Add the vegetable broth to the pot and stir to combine.
- Bring the soup to a simmer, then reduce the heat to low. Cover the pot and let the soup simmer for 15-20 minutes to allow the flavors to meld.
- After simmering, remove the pot from the heat and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup to a blender and puree it in batches until smooth, then return it to the pot.
- Stir in the chopped fresh basil and heavy cream or half-and-half until well combined.
- Season the soup with salt and pepper to taste, adjusting the seasoning as needed.
- Return the pot to the stove over low heat and gently reheat the soup until warmed through, being careful not to let it boil.
- Once heated through, ladle the Tomato Basil Soup into bowls. Garnish each bowl with a sprinkle of grated Parmesan cheese, a few croutons, and additional fresh basil leaves, if desired.
- Serve the Tomato Basil Soup hot, and enjoy the comforting and flavorful goodness!
