Ahh, there's nothing better for lunch than a warm, creamy bowl of tomato basil soup! This traditional soup is full of flavor and ideal for keeping you warm on a cold day. This is how to prepare it:

- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 1/2 cup heavy cream or coconut cream for a dairy-free option
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
- Optional: grated Parmesan cheese and additional fresh basil for garnish
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
- Add the minced garlic to the pot and cook for another minute until fragrant.
- Pour in the crushed tomatoes and vegetable broth, stirring to combine. Bring the mixture to a simmer.
- Reduce the heat to low and let the soup simmer for about 15-20 minutes, allowing the flavors to meld together.
- Stir in the heavy cream or coconut cream and chopped basil. Season with salt and pepper to taste.
- Use an immersion blender to blend the soup until smooth, or transfer it in batches to a blender and blend until smooth.
- Once blended, return the soup to the pot and heat through.
- Serve hot, garnished with grated Parmesan cheese and fresh basil if desired.
