Ingredients
- 3 pounds medium on-the-vine tomatoes
- 2 tablespoons extra-virgin olive oil
- β cup finely minced shallot
- 2 large garlic cloves, finely minced
- Β½ teaspoon sea salt
- Freshly ground black pepper
- 1 tablespoon tomato paste
- 2 teaspoons balsamic vinegar
- ΒΌ teaspoon cane sugar
- ΒΌ teaspoon dried oregano
- ΒΌ teaspoon red pepper flakes
- 1 sprig fresh basil
Instructions
- Halve the tomatoes and remove the seeds. Place a box grater over a large bowl and rub the cut side of the tomato flesh against the grater's large holes, grating the flesh into the bowl while leaving the skins behind.
- Warm the olive oil in a medium pot over low heat. Add the shallot, garlic, salt, and a few twists of black pepper. Cook for 3 minutes, stirring frequently.
- Introduce the grated tomatoes, tomato paste, balsamic vinegar, cane sugar, oregano, red pepper flakes, and a sprig of basil to the pot. Cover and simmer over low heat for 30 minutes, stirring occasionally. Discard the basil sprig, adjust seasoning to taste, and serve.
