Tortellini with Peas and Prosciutto​

Ingredients​

  • Kosher salt
  • 1 pound meat-filled tortellini
  • 2 tablespoons extra-virgin olive oil
  • 4 ounces prosciutto or pancetta, finely chopped
  • 3 cloves garlic, thinly sliced
  • 1 tablespoon tomato paste
  • 1/4 cup heavy cream
  • 1 cup frozen peas, thawed
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup grated Parmesan cheese

Directions​

  1. Cook Tortellini:
    • Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions.
  2. Prepare Sauce:
    • Meanwhile, heat a large skillet over medium heat. Add olive oil and prosciutto, cooking until crisp, about 3 to 4 minutes.
    • Stir in garlic and tomato paste, cooking until fragrant, about 1 minute.
    • Add about 1 cup of pasta cooking water and simmer until reduced by half, about 3 to 4 minutes.
    • Stir in cream and simmer until slightly thickened, about 2 to 3 minutes.
  3. Add Peas and Tortellini:
    • About 2 minutes before tortellini are done, add peas to boiling water and cook until just tender.
    • Drain tortellini and peas, then add to skillet, tossing to coat with sauce.
  4. Finish and Serve:
    • Stir in parsley.
    • Sprinkle with Parmesan cheese before serving.
