Perfect for any occasion, Tortilla Soup is a versatile and satisfying meal that warms both the heart and soul. This hearty soup combines a savory broth with tender chicken, fresh vegetables, and a blend of spices, all topped with crispy tortilla strips and your favorite garnishes.
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 jalapeño, seeded and minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 2 cups cooked, shredded chicken
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
- Avocado, diced (for garnish)
- Shredded cheese (for garnish)
- Sour cream (for garnish)
- Tortilla strips or crushed tortilla chips (for garnish)
Instructions:
- Sauté Vegetables:
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic and jalapeño, cooking for another 1-2 minutes until fragrant.
- Add Spices:
- Stir in the ground cumin, chili powder, and paprika, cooking for an additional minute to toast the spices.
- Add Broth and Vegetables:
- Pour in the chicken broth, diced tomatoes with green chilies, black beans, and corn kernels. Bring the mixture to a boil.
- Add Chicken:
- Reduce the heat to a simmer and add the cooked, shredded chicken. Let the soup simmer for about 15-20 minutes to allow the flavors to meld together.
