Ingredients:​

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 2 cups cooked, shredded chicken
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Avocado, diced (for garnish)
  • Shredded cheese (for garnish)
  • Sour cream (for garnish)
  • Tortilla strips or crushed tortilla chips (for garnish)

Instructions:​

  1. Sauté Vegetables:
    • In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
    • Add the minced garlic and jalapeño, cooking for another 1-2 minutes until fragrant.
  2. Add Spices:
    • Stir in the ground cumin, chili powder, and paprika, cooking for an additional minute to toast the spices.
  3. Add Broth and Vegetables:
    • Pour in the chicken broth, diced tomatoes with green chilies, black beans, and corn kernels. Bring the mixture to a boil.
  4. Add Chicken:
    • Reduce the heat to a simmer and add the cooked, shredded chicken. Let the soup simmer for about 15-20 minutes to allow the flavors to meld together.
  5. Season:
    • Taste the soup and season with salt, pepper, and lime juice as needed.
  6. Serve:
    • Ladle the soup into bowls and garnish with fresh cilantro, diced avocado, shredded cheese, sour cream, and tortilla strips or crushed tortilla chips.
