Here's a quick to go recipe for you if youre craving pasta!
Ingredients:
- 8 ounces tricolor rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach leaves, chopped
- 1/2 cup black olives, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup Italian parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions:
- Cook the Pasta: Cook the tricolor rotini pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Let it cool completely.
- Prepare the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and black pepper until well combined. Set aside.
- Assemble the Salad: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, chopped spinach, black olives, red onion, feta cheese, and Italian parsley.
- Add the Dressing: Pour the prepared dressing over the salad ingredients. Gently toss until everything is evenly coated with the dressing.
- Chill and Serve: Cover the bowl with plastic wrap and refrigerate the pasta salad for at least 1 hour to allow the flavors to meld together. Before serving, give the salad a final toss and adjust seasoning if necessary.
- Serve: Transfer the tricolor pasta salad to a serving dish and garnish with extra parsley or feta cheese if desired. Serve chilled and enjoy!
