Ingredients
  • 1 whole turkey (12-14 pounds)
  • 1/2 cup unsalted butter, softened
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 lemon, cut into wedges
  • 1 onion, quartered
  • 1 head of garlic, halved
  • Fresh herbs (rosemary, thyme, sage)
  • 2 cups chicken broth
Instructions
  1. Preheat your oven to 325°F (165°C). Place a rack in a large roasting pan.
  2. Prepare the turkey. Remove the giblets and pat the turkey dry with paper towels. Place the turkey on the rack in the roasting pan.
  3. Make the butter mixture. In a small bowl, combine the softened butter, salt, pepper, garlic powder, onion powder, dried thyme, and paprika. Mix well until smooth.
  4. Season the turkey. Rub the butter mixture all over the turkey, including under the skin for extra flavor. Stuff the cavity with the lemon wedges, onion quarters, garlic halves, and fresh herbs.
  5. Truss the turkey. Tie the legs together with kitchen twine and tuck the wing tips under the body. This helps the turkey cook evenly.
  6. Add broth to the pan. Pour the chicken broth into the bottom of the roasting pan. This will help keep the turkey moist.
  7. Roast the turkey. Place the turkey in the preheated oven. Roast for about 15 minutes per pound, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C). Baste the turkey with the pan juices every 30 minutes.
  8. Rest the turkey. Once done, remove the turkey from the oven and let it rest for at least 20 minutes before carving. This allows the juices to redistribute, making the meat more tender.
