Ingredients:
- 8 oz spaghetti or fettuccine
- 2 cups cooked turkey, shredded or diced
- 2 tbsp butter
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley (optional)
- Cook spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add onion and garlic, sauté until softened.
- Add mushrooms and cook until they release their liquid and start to brown.
- Sprinkle flour over the mushroom mixture and stir to combine. Cook for 1-2 minutes.
- Gradually add chicken broth and heavy cream, stirring constantly until the sauce thickens.
- Stir in Parmesan cheese until melted and smooth.
- Add cooked turkey and cooked spaghetti to the sauce, tossing gently to combine.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley if desired.
