  • 1 bunch of fresh turnip greens (about 1 pound)
  • 2-3 slices of bacon, chopped (optional)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1 cup chicken or vegetable broth (or water)

    Instructions:
  1. Prepare the Turnip Greens:
    • Wash the turnip greens thoroughly under cold water. Remove any tough stems and tear the leaves into bite-sized pieces.
  2. Cook Bacon (Optional):
    • In a large skillet or pot, cook the chopped bacon over medium heat until it becomes crispy. Remove excess fat, leaving about 1 tablespoon in the skillet.
  3. Saute Onion and Garlic:
    • Add the chopped onion to the skillet with the bacon fat. Cook until the onion becomes translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  4. Add Turnip Greens:
    • Add the prepared turnip greens to the skillet. Stir well to coat them with the onion, garlic, and bacon fat. Cook for about 2 minutes, stirring occasionally, until the greens begin to wilt.
  5. Season and Simmer:
    • Season the greens with red pepper flakes, salt, and pepper according to your taste. Pour in the chicken or vegetable broth (or water) to cover the greens partially. Bring to a simmer.
  6. Simmer Until Tender:
    • Reduce the heat to low, cover the skillet, and simmer the turnip greens for about 15-20 minutes, or until they are tender. Stir occasionally and add more broth or water if needed to prevent sticking.
  7. Serve:
    • Once the turnip greens are tender and cooked to your liking, remove from heat. Adjust seasoning if necessary. Serve hot as a side dish.
