- 1 bunch of fresh turnip greens (about 1 pound)
- 2-3 slices of bacon, chopped (optional)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- 1 cup chicken or vegetable broth (or water)
Instructions:
- Prepare the Turnip Greens:
- Wash the turnip greens thoroughly under cold water. Remove any tough stems and tear the leaves into bite-sized pieces.
- Cook Bacon (Optional):
- In a large skillet or pot, cook the chopped bacon over medium heat until it becomes crispy. Remove excess fat, leaving about 1 tablespoon in the skillet.
- Saute Onion and Garlic:
- Add the chopped onion to the skillet with the bacon fat. Cook until the onion becomes translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Add Turnip Greens:
- Add the prepared turnip greens to the skillet. Stir well to coat them with the onion, garlic, and bacon fat. Cook for about 2 minutes, stirring occasionally, until the greens begin to wilt.
- Season and Simmer:
- Season the greens with red pepper flakes, salt, and pepper according to your taste. Pour in the chicken or vegetable broth (or water) to cover the greens partially. Bring to a simmer.
- Simmer Until Tender:
- Reduce the heat to low, cover the skillet, and simmer the turnip greens for about 15-20 minutes, or until they are tender. Stir occasionally and add more broth or water if needed to prevent sticking.
- Serve:
- Once the turnip greens are tender and cooked to your liking, remove from heat. Adjust seasoning if necessary. Serve hot as a side dish.
Serving Suggestions:
- Serve as a side dish alongside grilled or roasted meats.
- Enjoy with cornbread or biscuits for a classic Southern meal.
- Add a splash of vinegar or hot sauce for extra flavor.
