- 4 cups chicken or vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 cup sliced mushrooms (shiitake or cremini work well)
- 1 cup baby spinach or chopped greens
- 2 large eggs
- 2 green onions, thinly sliced
- Salt and pepper to taste
- Optional: a splash of rice vinegar or a pinch of red pepper flakes for added flavor
Instructions:
- Prepare the Broth:
- In a large pot, heat the sesame oil over medium heat.
- Add the minced garlic and ginger, and sauté until fragrant, about 1 minute.
- Pour in the chicken or vegetable broth and soy sauce. Bring to a boil.
- Add the Vegetables:
- Reduce the heat to a simmer. Add the sliced mushrooms and cook for about 5 minutes until they are tender.
- Add Greens:
- Stir in the baby spinach or greens and cook for another 2 minutes until they are wilted.
- Prepare the Egg Ribbons:
- In a small bowl, lightly beat the eggs.
- Slowly pour the beaten eggs into the simmering broth while stirring gently with a fork or whisk to create thin ribbons of egg.
- Season and Serve:
- Taste the soup and adjust seasoning with salt and pepper, or add a splash of rice vinegar for a tangy kick.
- Ladle the soup into bowls and garnish with sliced green onions.
