Ultimate Egg Soup Recipe

Ingredients:


  • 4 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 cup sliced mushrooms (shiitake or cremini work well)
  • 1 cup baby spinach or chopped greens
  • 2 large eggs
  • 2 green onions, thinly sliced
  • Salt and pepper to taste
  • Optional: a splash of rice vinegar or a pinch of red pepper flakes for added flavor

Instructions:


  1. Prepare the Broth:
    • In a large pot, heat the sesame oil over medium heat.
    • Add the minced garlic and ginger, and sauté until fragrant, about 1 minute.
    • Pour in the chicken or vegetable broth and soy sauce. Bring to a boil.
  2. Add the Vegetables:
    • Reduce the heat to a simmer. Add the sliced mushrooms and cook for about 5 minutes until they are tender.
  3. Add Greens:
    • Stir in the baby spinach or greens and cook for another 2 minutes until they are wilted.
  4. Prepare the Egg Ribbons:
    • In a small bowl, lightly beat the eggs.
    • Slowly pour the beaten eggs into the simmering broth while stirring gently with a fork or whisk to create thin ribbons of egg.
  5. Season and Serve:
    • Taste the soup and adjust seasoning with salt and pepper, or add a splash of rice vinegar for a tangy kick.
    • Ladle the soup into bowls and garnish with sliced green onions.
