Ingredients​

  • ¼ cup vegan margarine (50 g)
  • ½ cup soy milk (120 mL)
  • 2 tablespoons sunflower oil, plus extra for frying
  • 2 cups plain flour (250 g)
  • ½ cup caster sugar (100 g)
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions​

  1. Prepare the Dough
    • In a small saucepan, gently melt the vegan margarine over low to medium heat.
    • Add the soy milk and 2 tablespoons of sunflower oil to the melted margarine. Mix well and set aside to cool slightly.
  2. Mix Dry Ingredients
    • In a large mixing bowl, combine the plain flour, half of the caster sugar, baking powder, and salt. Use a fork to mix them evenly.
  3. Combine Wet and Dry Ingredients
    • Create a well in the center of the dry ingredients and pour in the melted margarine mixture.
    • Gradually mix everything together until a thick dough forms. Use your hands if necessary to fully incorporate the ingredients.
  4. Shape the Doughnuts
    • Lightly flour your hands to prevent sticking. Roll the dough into small balls and gently press your thumb through the center of each ball to create a hole, forming doughnuts.
  5. Fry the Doughnuts
    • Heat sunflower oil in a deep frying pan or pot. To test if the oil is ready, fry a small piece of bread in it. The bread should brown and float to the surface in about 45-50 seconds.
    • Carefully place the doughnuts into the hot oil using a spatula. Fry each side for 3-5 minutes, or until golden brown.
  6. Finish and Serve
    • Once fried, transfer the doughnuts onto a plate lined with paper towels to absorb excess oil.
    • While still warm, roll each doughnut in the remaining caster sugar until coated evenly.
    • Serve the vegan doughnuts warm and enjoy!
