Ingredients:
- ¾ cup coconut milk beverage
- 2 tablespoons vegan chocolate chips
- ½ tablespoon espresso powder
- ¼ teaspoon ground cinnamon
- ¼ teaspoon vanilla extract
- 1 tablespoon vegan whipped cream
Directions:
- Combine the coconut milk beverage and chocolate chips in a small saucepan over medium heat. Bring to a slow boil, whisking constantly, until the chocolate chips are melted, about 2 to 3 minutes.
- Whisk in the espresso powder and cinnamon until everything is fully mixed. Remove from heat and stir in the vanilla extract.
- Pour the mocha mixture into a mug and top with vegan whipped cream. Sprinkle a little extra cinnamon on top if you like!
