Ingredients:​

  • 2 ripe avocados
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup pure maple syrup or agave nectar
  • 1/4 cup coconut milk (or any plant-based milk)
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions:​

  1. Prepare the Avocados: Peel and pit the avocados. Scoop the flesh into a blender or food processor.
  2. Blend: Add the cocoa powder, maple syrup, coconut milk, vanilla extract, and salt.
  3. Blend Until Smooth: Blend until the mixture is creamy and smooth. You might need to scrape down the sides a few times to ensure everything is well mixed.
  4. Chill: Transfer the mousse to serving dishes and chill in the refrigerator for at least 30 minutes to let it firm up a bit.
  5. Serve: Enjoy as is, or top with fresh berries, nuts, or a sprinkle of sea salt for extra flavor.

Savory Tofu Recipe: Crispy Tofu Stir-Fry​

Ingredients:​

  • 1 block firm tofu, drained and pressed
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil (or vegetable oil)
  • 1 tbsp cornstarch
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium carrot, sliced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp soy sauce (for stir-fry sauce)
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • Cooked rice or noodles (for serving)
  • Optional: sliced green onions, sesame seeds for garnish

Instructions:​

  1. Prepare the Tofu: Cut the tofu into bite-sized cubes. Toss with 2 tbsp soy sauce and let marinate for 5 minutes.
  2. Coat the Tofu: After marinating, toss the tofu with cornstarch to coat it evenly. This helps it become crispy when cooked.
  3. Cook the Tofu: Heat sesame oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook until golden and crispy on all sides, about 5-7 minutes. Remove tofu from the pan and set aside.
  4. Stir-Fry Vegetables: In the same pan, add a bit more oil if needed and stir-fry bell pepper, broccoli, and carrot until tender-crisp, about 5 minutes.
  5. Add Aromatics: Add garlic and ginger to the pan and stir-fry for another minute.
  6. Add Sauce: Stir in the soy sauce, hoisin sauce, and rice vinegar. Mix well to coat the vegetables.
  7. Combine Tofu and Veggies: Return the crispy tofu to the pan and toss everything together until well combined and heated through.
  8. Serve: Serve the stir-fry over cooked rice or noodles. Garnish with sliced green onions and sesame seeds if desired.
