  • 1 can (15 ounces) corn kernels, drained
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • 2 cups vegetable broth
  • 1 tablespoon tomato paste
  • 1 tablespoon soy sauce (optional, for umami flavor)
  • Fresh cilantro, chopped (for garnish)
  • Shredded cheese, sour cream, and avocado (optional, for serving)
Instructions:

  1. Sauté Vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic, bell pepper, carrots, celery, and zucchini, and cook for another 5-7 minutes until the vegetables are tender.
  2. Add Spices: Stir in the chili powder, ground cumin, paprika, dried oregano, and cayenne pepper (if using). Cook for 1-2 minutes until the spices are fragrant.
  3. Add Tomatoes and Broth: Pour in the crushed tomatoes, vegetable broth, and tomato paste. Stir to combine.
  4. Add Beans and Corn: Add the black beans, kidney beans, and corn to the pot. Stir well and bring the mixture to a boil.
  5. Simmer: Reduce the heat to low and let the chili simmer for 30-40 minutes, stirring occasionally, until the flavors are well combined and the chili has thickened. Add soy sauce if using.
  6. Adjust Seasoning: Taste and adjust the seasoning with salt and pepper as needed.
