This dish is not only delicious but also packed with nutrients, making it a perfect choice for a cozy dinner or a quick lunch fix. Ingredients:

  • 4 cups fresh broccoli florets
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 tablespoons butter
  • 3 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional toppings: grated cheddar cheese, croutons, or a drizzle of olive oil

  1. Start by melting the butter in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until they turn soft and translucent, releasing their aromatic flavors.
  2. Next, toss in the broccoli florets and continue cooking for about 5 minutes, allowing the broccoli to slightly soften and absorb the flavors from the onions and garlic.
  3. Pour in the vegetable or chicken broth, bringing the mixture to a gentle boil. Reduce the heat to low, cover the pot, and let it simmer for around 15-20 minutes, or until the broccoli is tender and easily pierced with a fork.
  4. Once the broccoli is cooked through, it's time to blend everything into a smooth and creamy soup. You can use an immersion blender directly in the pot for convenience, or carefully transfer the soup in batches to a blender and blend until smooth. Be cautious when blending hot liquids to avoid splattering.
  5. After blending, return the soup to the pot if you used a blender. Stir in the heavy cream, allowing it to heat through without boiling. Season with salt and pepper according to your taste preferences, adjusting the seasoning as needed.
