Ingredients:
- 4 cups fresh broccoli florets
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 tablespoons butter
- 3 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Optional toppings: grated cheddar cheese, croutons, or a drizzle of olive oil
- Start by melting the butter in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until they turn soft and translucent, releasing their aromatic flavors.
- Next, toss in the broccoli florets and continue cooking for about 5 minutes, allowing the broccoli to slightly soften and absorb the flavors from the onions and garlic.
- Pour in the vegetable or chicken broth, bringing the mixture to a gentle boil. Reduce the heat to low, cover the pot, and let it simmer for around 15-20 minutes, or until the broccoli is tender and easily pierced with a fork.
- Once the broccoli is cooked through, it's time to blend everything into a smooth and creamy soup. You can use an immersion blender directly in the pot for convenience, or carefully transfer the soup in batches to a blender and blend until smooth. Be cautious when blending hot liquids to avoid splattering.
- After blending, return the soup to the pot if you used a blender. Stir in the heavy cream, allowing it to heat through without boiling. Season with salt and pepper according to your taste preferences, adjusting the seasoning as needed.
- Serve the creamy broccoli soup hot, garnishing each bowl with your favorite toppings. I personally love adding a sprinkle of grated cheddar cheese and a few crunchy croutons on top for extra flavor and texture.
Bon appétit!
