Ingredients:​

  • 1 small head of cabbage, thinly sliced or shredded
  • 1 large carrot, grated
  • 1/2 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey (adjust to taste)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon celery seeds or poppy seeds for added flavor

Instructions:​

  1. Prepare the Vegetables:
    • Thinly slice or shred the cabbage.
    • Grate the carrot.
  2. Make the Dressing:
    • In a small bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper until well combined.
    • If using, stir in the celery seeds or poppy seeds.
  3. Combine:
    • Place the shredded cabbage and grated carrot in a large bowl.
  4. Toss:
    • Pour the dressing over the cabbage and carrot mixture.
    • Toss until the vegetables are evenly coated with the dressing.
  5. Chill and Serve:
    • Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld.
    • Serve chilled as a side dish or topping for sandwiches, tacos, or burgers.
