Ingredients:
- 2 tbsp butter (vegan or regular)
- 2 shallots, chopped
- 2 cloves garlic, minced
- 1/4 cup tomato paste
- 1 tbsp vodka
- 1/2 cup heavy cream
- 1 tsp chili flakes
- Salt and pepper, to taste
- 225 g rigatoni (dry measure)
- 1 tbsp butter (vegan or regular)
- 1/4 cup Parmesan cheese, plus more for garnish
- Fresh basil, for garnish
- Prepare Pasta:
- Bring a large pot of water to a boil and cook the rigatoni according to package directions. Reserve 1 cup of pasta water before draining.
- Make the Vodka Sauce:
- In a large saucepan, melt 2 tbsp butter over medium heat. Add chopped shallots and minced garlic. Sauté until softened, about 3-5 minutes.
- Stir in tomato paste and cook until the sauce darkens and caramelizes slightly, about 2-3 minutes.
- Add vodka to the saucepan and cook until it evaporates.
- Pour in the heavy cream and add chili flakes. Stir constantly until the sauce is well combined and season with salt and pepper to taste. If the pasta is still cooking, remove the sauce from heat.
- Combine Pasta and Sauce:
- When the pasta is al dente, add 1/2 cup of reserved pasta water and 1 tbsp butter to the vodka sauce. Stir over medium heat until the butter melts and the sauce becomes smooth and creamy. Add another 1/4 cup of pasta water if needed.
- Add the drained rigatoni and 1/4 cup Parmesan cheese to the sauce. Stir well to combine. Remove from heat and adjust seasoning with more salt and pepper if necessary.
- Serve:
- Garnish the vodka pasta with fresh basil leaves and additional Parmesan cheese according to taste.
