What happens if you let cinnamon rolls rise too long?

Okay, so I've been experimenting with cinnamon rolls and kinda let mine rise for way too long. Like, I got distracted (thanks, TikTok) and forgot about them. What actually happens if they over-proof? Do they get super fluffy or just collapse under their own ambition? Has anyone else had this happen (。· v ·。) ?
