Whole Wheat Oatmeal Pancakes
Ingredients:
- 1 cup whole wheat flour
- 1/2 cup old-fashioned oats
- 2 tablespoons brown sugar (or honey for a natural touch)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk (dairy or non-dairy)
- 1 egg
- 2 tablespoons melted butter or vegetable oil
- 1 teaspoon vanilla extract
Instructions:
- Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, oats, brown sugar, baking powder, and salt.
- Combine Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter (or oil), and vanilla extract.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. It’s okay if the batter is a bit lumpy. Let it rest for about 5 minutes to thicken up.
- Preheat Pan: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
- Cook Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.
