- 1 cup cornmeal
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh or frozen corn kernels (thawed if frozen)
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1/4 cup plain Greek yogurt or sour cream
- 2 large eggs
- 1/4 cup milk (any type you prefer)
- 2 tablespoons olive oil or melted butter
Instructions:
- Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking pan with cooking spray or butter.
- In a large mixing bowl, combine the whole wheat flour, cornmeal, baking powder, and salt. Mix well to combine.
- In a separate bowl, whisk together the fresh or thawed corn kernels, honey or maple syrup, unsweetened applesauce, Greek yogurt or sour cream, eggs, milk, and olive oil or melted butter until smooth and well combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
- Pour the batter into the prepared baking pan, spreading it out evenly with a spatula.
- Bake the cornbread in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
