But does it seem to be so important? Can this be just optional? I'm not an expert baker, just a curious soul with a sweet tooth. Let's talk this out!

Ah, the donut dilemma, yeast or no yeast? Personally, I think yeast adds that signature lightness to donuts. Though, you can make them without yeast, they'll have a different texture, more like cake donuts!
