Ingredients:​

For the Cake:​

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup milk (whole or evaporated)
  • 4 large eggs, separated
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar

For the Yema Frosting:​

  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup evaporated milk
  • 1/4 cup unsalted butter
  • 4 large egg yolks
  • 1/2 teaspoon vanilla extract

Instructions:​

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. Prepare the Cake Batter:
    • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
    • In a large bowl, beat the egg yolks and granulated sugar until pale and creamy.
    • Add the vegetable oil and milk, and mix until well combined.
    • Stir in the vanilla extract.
    • Gradually add the dry ingredients to the wet mixture, mixing until smooth and well combined.
  3. Prepare Egg Whites:
    • In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.
    • Gently fold the beaten egg whites into the cake batter in thirds, being careful not to deflate them.
  4. Bake the Cake:
    • Pour the batter into the prepared cake pan and smooth the top.
    • Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  5. Prepare the Yema Frosting:
    • In a medium saucepan, combine the sweetened condensed milk, evaporated milk, butter, and egg yolks.
    • Cook over medium heat, stirring continuously, until the mixture thickens and reaches a custard-like consistency. This usually takes about 10-15 minutes.
    • Remove from heat and stir in the vanilla extract. Allow the frosting to cool slightly before using.
  6. Frost the Cake:
    • Once the cake has completely cooled, spread a layer of yema frosting on top and sides of the cake.
  7. Decorate (Optional):
    • You can garnish the cake with additional yema frosting, grated cheese, or even a drizzle of caramel sauce if desired.
  8. Serve:
    • Slice and serve the Yema Cake. Enjoy the rich, buttery flavor and soft, fluffy texture!

  • Cooling: Ensure the cake is completely cool before frosting to prevent the yema frosting from melting.
  • Folding: Be gentle when folding the egg whites into the batter to maintain the cake’s light texture.
