Satisfy the sweetooth!


Ingredients:
For the Cake:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup milk (whole or evaporated)
- 4 large eggs, separated
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cream of tartar
For the Yema Frosting:
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup evaporated milk
- 1/4 cup unsalted butter
- 4 large egg yolks
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- Prepare the Cake Batter:
- In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the egg yolks and granulated sugar until pale and creamy.
- Add the vegetable oil and milk, and mix until well combined.
- Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until smooth and well combined.
- Prepare Egg Whites:
- In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.
- Gently fold the beaten egg whites into the cake batter in thirds, being careful not to deflate them.
- Bake the Cake:
- Pour the batter into the prepared cake pan and smooth the top.
- Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the Yema Frosting:
- In a medium saucepan, combine the sweetened condensed milk, evaporated milk, butter, and egg yolks.
- Cook over medium heat, stirring continuously, until the mixture thickens and reaches a custard-like consistency. This usually takes about 10-15 minutes.
- Remove from heat and stir in the vanilla extract. Allow the frosting to cool slightly before using.
- Frost the Cake:
- Once the cake has completely cooled, spread a layer of yema frosting on top and sides of the cake.
- Decorate (Optional):
- You can garnish the cake with additional yema frosting, grated cheese, or even a drizzle of caramel sauce if desired.
- Serve:
- Slice and serve the Yema Cake. Enjoy the rich, buttery flavor and soft, fluffy texture!
Tips:
- Cooling: Ensure the cake is completely cool before frosting to prevent the yema frosting from melting.
- Folding: Be gentle when folding the egg whites into the batter to maintain the cake’s light texture.
- Storage: Store leftover cake in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
