- 1/4 cup cilantro leaves, chopped
- 1/4 cup shallots, thinly sliced
- 1/4 cup Thai basil leaves, chopped
- 1/4 cup mint leaves, chopped
For the Dressing:
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon palm sugar (or brown sugar)
- 2-3 Thai bird's eye chilies, finely chopped (adjust to taste)
- 2 cloves garlic, minced
Instructions:
- Prepare the Winged Beans:
- Bring a pot of water to a boil. Blanch the winged beans for 1-2 minutes until they are crisp-tender. Drain and rinse under cold water to stop the cooking process. Set aside.
- Make the Dressing:
- In a small bowl, whisk together fish sauce, lime juice, palm sugar, Thai chilies, and minced garlic until the sugar is dissolved and all ingredients are well combined. Set aside.
- Assemble the Salad:
- In a large mixing bowl, combine blanched winged beans, halved cherry tomatoes, boiled shrimp (if using), chopped roasted peanuts, cilantro leaves, sliced shallots, Thai basil leaves, and mint leaves.
