Ingredients:
- 1 cup heavy cream or whipping cream
- 1 tablespoon fresh buttermilk or crème fraîche
- 1 sterilized glass jar
- 1 sterilized metal spoon
Directions:
- Mix the cream and buttermilk in the jar.
- Cover and let it sit in a warm place (like on top of the fridge) for 12–24 hours. This allows the buttermilk cultures to thicken the cream.
- Shake or stir the mixture 2–3 times while it sits to prevent a hard layer from forming.
- After 12–24 hours, the mixture should be thicker and smell slightly sour. Stir it well and chill in the fridge for about 2 hours. It will thicken more as it cools.
