- 1 cup cookie butter (or any nut butter)
- 2 eggs
- 1⁄3 cup brown sugar
- 1⁄4 cup chocolate chips (optional)
- Ice cream for serving (also optional but highly recommended)
Instructions:
- Preheat your oven to 350°F and thoroughly grease 4 ramekins or oven-safe mugs/cups.
- In a medium bowl, whisk together the cookie butter, eggs and brown sugar until well combined and slightly thickened. If using chocolate chips, fold them in now.
- Divide the batter evenly between your greased ramekins/cups.
- Bake for 12-15 minutes. The tops should look set but the middles will still be soft and jiggly.
- Carefully remove from oven and allow to cool for just 2-3 minutes. Any longer and the gooey centers will continue cooking.
- Grab a spoon and dig into the molten cookie butter centers! Top with a scoop of ice cream if you want to go into full dessert euphoria.
