2. Spray cooking spray on the air fryer basket sparingly. Fill basket with four (1/4-cup) scoops of potato mixture. Flatten with a spatula and lightly sprinkle cooking spray on top.
3. Preheat the air fryer to 350°F, or 175°C. Fry latkes for 8 to 10 minutes, flipping them halfway through, or until browned all over. Proceed with the leftover potato mixture. Add some sliced green onions as a garnish and serve with crème fraîche or sour cream.

- 2 cups packaged shredded potatoes
- 1/2 cup peeled and shredded Granny Smith apple
- 1 large egg yolk
- 1 tablespoon flour
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon kosher salt
