Almond Butter Brown Rice Crispy Treats Recipe
Ingredients:
- 4 cups brown rice crispy cereal
- 1/2 cup almond butter
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil (or unsalted butter)
- 1/2 teaspoon vanilla extract
- A pinch of salt
- Optional: Mini chocolate chips or dried fruit for mix-ins
Instructions:
- Prep the Pan: Line an 8x8-inch baking dish with parchment paper, leaving a little overhang for easy removal later.
- Heat the Sweet Stuff: In a medium saucepan, combine the almond butter, honey (or maple syrup), and coconut oil (or butter). Heat over medium heat, stirring constantly, until everything is melted and well combined.
- Add Flavor: Stir in the vanilla extract and a pinch of salt. Mix well.
- Combine with Cereal: Pour the almond butter mixture over the brown rice crispy cereal in a large bowl. Stir until all the cereal is evenly coated.
- Press & Set: Transfer the mixture to the prepared baking dish. Use a spatula or the back of a spoon to press it down firmly and evenly.
- Cool & Cut: Allow the treats to cool and set at room temperature for at least 2 hours. Once set, lift out of the dish using the parchment paper and cut into squares.
- Optional Extras: If you’re adding mini chocolate chips or dried fruit, gently fold them into the mixture before pressing it into the pan.
