Almond Flour Pancake Recipe

Hey everyone! I just had to share this super easy Almond Flour Pancake recipe I’ve been making lately. It’s a great alternative if you’re looking for something gluten-free but still fluffy and delicious! Thought I’d see if anyone else has tried something similar or has tips to make it even better. 😋

Ingredients:

  • 1 cup almond flour
  • 2 eggs
  • 1/4 cup milk (I use almond milk, but any will work!)
  • 1 tbsp maple syrup (or honey)
  • 1/2 tsp baking powder
  • A pinch of salt
  • 1/2 tsp vanilla extract (optional but yummy!)
Instructions:

  1. In a bowl, whisk together the almond flour, baking powder, and salt.
  2. In another bowl, mix eggs, milk, maple syrup, and vanilla extract.
  3. Combine the wet and dry ingredients, and stir until smooth.
  4. Heat a non-stick pan over medium heat, lightly grease, and pour in the batter (I make small pancakes to keep them easy to flip).
  5. Cook for about 2-3 minutes per side or until golden.
