Hey everyone! Check out this delightful recipe for Arancini – crispy Italian rice balls stuffed with gooey mozzarella cheese. They're easy to make, irresistibly delicious, and perfect for using up leftover risotto. Give them a try for a unique and tasty appetizer or snack!

Ingredients:

Ingredients:
- Leftover risotto (about 2 cups)
- Mozzarella cheese, cut into small cubes
- 2 eggs, beaten
- Bread crumbs
- Vegetable oil, for frying
- Marinara sauce, for dipping
- Prepare the Risotto Balls:
- Take a small handful of leftover risotto and flatten it in your hand.
- Place a cube of mozzarella cheese in the center and shape the risotto around it to form a ball. Repeat with the remaining risotto and cheese.
- Coat the Arancini:
- Dip each risotto ball into the beaten eggs, then roll it in bread crumbs until evenly coated. Repeat for a thicker crust, if desired.
- Fry to Perfection:
- Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- Carefully drop the coated risotto balls into the hot oil and fry until golden brown and crispy, about 3-4 minutes. Work in batches to avoid overcrowding the pan.
- Remove the arancini from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve and Enjoy:
- Serve the arancini hot with marinara sauce for dipping.
