Ingredients:

  • 3 lbs pork shoulder, cut into large chunks
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 oranges, juiced (keep the halves)
  • 1 lime, juiced
  • 1 tsp salt
  • 1 tsp ground cumin
  • Water to cover
Procedure:

  1. Place the pork in a large pot or Dutch oven. Add the onion, garlic, salt, and cumin.
  2. Squeeze the orange and lime juice over the pork and toss in the squeezed halves.
  3. Add enough water to just cover the ingredients. Bring to a boil, then reduce to a simmer.
  4. Cover and simmer for about 2-3 hours until the pork is very tender.
  5. Remove the pork and shred it with forks. In a skillet, crisp the pork in batches until golden.
  6. Serve with tortillas, cilantro, diced onions, and a squeeze of lime.
